
Tom Donelan, Sr., and the Donelan family started Midstate Meat Co. in Springfield, Illinois in 1977. After several years of working to establish Midstate Meat as a premier choice for meat and poultry, Tom and Regina purchased Ciota & Foster Meats Co. Midstate Meat Co./Ciota & Foster became a valuable entity in the Springfield marketplace, serving not only local residents but also businesses in Central Illinois.
It was clear early on that Midstate Meat would be a business strongly rooted in family. Tom and Regina's son Paul began helping with the business from an early age. Paul Donelan today follows in his father's footsteps after years of meat-cutting and hands-on experience. (You cannot mention Midstate Meat Co. in Springfield without customers complimenting Paul on his friendly demeanor and lively conversation!) Tom and Regina's grandson, Steve Donelan, began work in the business after graduating from Illinois State University and helps Paul to continue the Donelan family legacy.
